GARLIC NOODLES

I first had garlic noodles at a restaurant in Downtown San Mateo in California. I was surprised at the simplicity of the dish but it was packed with flavors I just kept on eating with a roasted crab for entree. I was eating with my hands so imagine how much I ate that time!


Garlic Noodles is best eaten paired with seafood cooked Vietnamese style, or with Shaking Beef to make for a complete meal. This dish is quick and easy to prepare, in under 30 minutes!


 

INGREDIENTS

½ pound spaghetti, cooked and drained (make sure it is dry)

(you can also use angel hair pasta, egg noodles, etc.)

½ head of garlic, minced

1 Tablespoon oyster sauce

1 Tablespoon soy sauce

½ Tablespoon fish sauce

½ cup grated Parmigiano Reggiano (or Parmesan Cheese)

Oil or butter for sautéing


 

INSTRUCTIONS

In a small bowl, mix the oyster sauce, soy sauce and fish sauce until well combined. Set aside.

Heat oil or melt butter in a skillet or pan on medium heat.

Sauté the garlic until aromatic. Do not brown the garlic.

Add the cooked noodles into the pan and stir to mix the noodles and the garlic.

Pour the sauce over the noodles. Stir, making sure the noodles are coated with the sauce.


Turn off heat.

Add the cheese.

Toss the noodles using 2 frying spatulas or a pair of tongs.

Make sure the noodles are well coated with cheese.

Serve while hot.
