The perfect pairing sauce to Hainanese Chicken Rice. It is sweet, salty, tangy with the right amount of kick!
INGREDIENTS
¼ head of garlic, peeled and minced
1 thumb size ginger, peeled and minced
2 Tablespoons fermented soybean paste
4 teaspoons soy sauce
1 teaspoon rice wine
1 Tablespoon palm sugar (you can substitute with coconut or brown sugar)
1 piece Thai chile pepper, minced
1 Tablespoon Cilantro roots, chopped
INSTRUCTIONS
Using a mortar and pestle, pound into a paste the minced garlic and ginger.
Transfer to a bowl and add remaining ingredients.
Mix until well incorporated.
Serve with Hainanese Chicken Rice.
