CHICKEN LARB LETTUCE WRAPS

There are a variety of ways on how to make this dish. This is likely the easiest way to prep and cook it, without compromising on flavor. With ingredients that are simple and easy to find, this is quick and easy to prepare. A flavorful dish is ready to serve in under thirty minutes!

INGREDIENTS

1-pound ground chicken

Half a head of garlic, peeled and minced

1 small yellow onion, peeled and finely chopped

½ teaspoon chili flakes (or more depending on your taste preference)

¼ cup fresh mint leaves

¼ cup fresh basil leaves

¼ cup fresh cilantro

2 ½ Tablespoons fish sauce

1 ½ teaspoon brown sugar

1 fresh lime, juiced

1 teaspoon Sambal Oelek

One head of Butter, Boston or Iceberg Lettuce, separate into individual leaves

Oil for sautéing

INSTRUCTIONS

Sauce:

In a small bowl, combine fish sauce, brown sugar, lime juice and Sambal Oelek. Mix until well combined and sugar is dissolved. Set aside.

On medium heat, in a skillet or pan, heat oil and sauté garlic. Once aromatic, add the chopped onion and cook until tender.

Add the ground chicken. Make sure to separate into bits and mix into garlic and onion well. Cook for 5 to 8 minutes. More, if you want the chicken slightly toasted.

Add the sauce and chili flakes. Stir. Make sure the sauce is well combined into the meat mixture.

Let simmer for about 5 to 7 minutes, stirring occasionally.

Turn off heat.

Add herbs--- mint, cilantro, and basil. Stir to combine into meat mixture.

Serve with lettuce leaves.

You can make extra sauce (ingredients as above)--- omit the Sambal Oelek but add sliced Thai chile pepper instead, to use as dipping, or to drizzle onto cooked chicken in lettuce wraps.
